Raw Food Recipe - Zucchini Pasta with Marinara Sauce

March 16, 2010 - 7:29 pm 11 Comments

Zucchini pasta with marinara sauce is another one of my favorite raw food recipes and is also very easy to make. Ive omitted the oil from this recipe because Im working on slashing the fat off my body as quickly as possible (the oil is high-fat and I didnt add the sun-dried tomatoes because I didnt have any on hand). So far Ive lost a total of 14.7lbs in 14 days by eating only raw foods. My average weight loss is 1 pound per day on a raw food diet which is actually more than I was losing when I was doing the HCG diet! This recipe is also good for Phase 1, 2, 3 and 4 on the HCG diet.

Ingredients:

2 cups fresh tomatoes
2 cups red bell peppers
1/2 cup sun dried tomatoes (optional)
2 or 3 garlic cloves
3 tablespoons fresh basil
Himalayan crystal salt (optional)
Zucchini (use a spirooli vegetable slicer to cut the zucchini into spiral-shaped pasta)
½ cup olive oil (I omitted this in the video)
½ cup sun-dried tomatoes (I also omitted this because I didnt have any on hand)

1. Prepare the sun-dried tomatoes by soaking them for about two hours. You can speed up the soaking process by soaking them for about 30 minutes in warm to hot water. Save the soak water and you can use a little in the recipe for extra flavor.

2. Blend the tomatoes and red bell peppers with the garlic and olive oil until it reaches the consistency of tomato sauce (ketchup). I blend it for a few seconds and leave it slightly chunky. You could also add a pinch of salt if you wish.

The fresh tomatoes sometimes have enough juice for the recipe. If they are dry you may pour in a little soak water until it reaches the correct consistency.

Add in the basil at the end and briefly blend. If you blend the herbs too much they may become bitter.

3. Pour sauce over zucchini noodles and serve.

Optional Ingredients:

Every time I make this recipe, I change the flavor by adding in one or two of the following ingredients:

- A handful of fresh or dried herbs, such as chives, thyme, parsley, sage, rosemary, or the dried Italian Seasoning.

- Dash of cayenne pepper powder to add a little heat.

- A half an apple to add a sweet flavor.

I read that menstruation can become lighter on raw foods?

January 12, 2010 - 10:36 am 2 Comments

I have always had pain/problems. I have been raw for one week only (cheated once) and had the WORST pain ever from cramping yesterday. The day I ate a tuna sandwich on wheat bread…

Is this normal? Detox? Will it be like that next month if I don’t cheat?
strange thing is my first day, usually the worst, was so light. then the night i ate that sandwhich was my problem
any non dogmatic rawists think this is not a coincidence?

I’m not a raw foodist, but I am a vegan. I noticed a drastic difference in my periods once I gave up all dairy products. My period is shorter, lighter and I have less cramps/PMS symptoms.

If you’ve only been on a raw diet for a week, you will not notice a difference in your first period. You must follow that diet for a couple of months before you notice a difference. I think the third month after going vegan I started to notice the difference in my cycle.

Good luck!

Curried Lentil Salad

Source: The Raw Gourmet by Nomi Shannon (Alive Books, 1999)

Ingredients

* 2 tsp of tamari (or Braggs Liquid Aminos)
* 1 tbsp of lemon juice
* 1 clove of garlic, crushed
* 1 tsp of curry powder (or to taste)
* 2 cups of sprouted lentils
* 1/2 cup of chopped onion

Method

1. Mix together the tamari, lemon juice, garlic and curry powder in a small bowl.
2. Combine the lentils and onion in a separate bowl and pour on the dressing. Mix well.

Serves 2-4

Sprouted lentils have a nice crunchy texture and are a good source of iron and vitamin C. I prefer to use sprouted green lentils when I make this recipe, but any kind of sprouted whole lentil can be used.

***

Zesty Daikon Salad

* 2 cups peeled and thinly sliced daikon (white radish)
* 1/2 cup thinly sliced mild onion
* 1 cup peeled and chopped apple
* juice of one lime

Mix all ingredients together and enjoy.
This is incredibly clean and fresh tasting, and is a great accompaniment to more earthy foods.
For a sweeter taste, replace the lime juice with orange juice.

100% fat free! Serves: 6 Preparation time: 10 minutes

Kayree Panha (raw mango drink)

Made with fresh raw mangoes, abundant in the summer months, Kayree (raw mango) Panha is from the state of Maharashtra in Western India. It is a sweet-sour-spicy drink! This recipe makes 6 tall glasses.
INGREDIENTS:

* 4 medium-sized raw green mangoes
* 2 cups sugar
* 1 cup water
* 1 tbsp coarsely ground black rock salt
* 1 tsp freshly ground pepper
* 2 tbsps Aniseed/fennel seeds ground coarsely
* 2 tbsps cumin seeds roasted and ground coarsely
* Chilled water
* Crushed ice
* Sprigs of mint to garnish

PREPARATION:

* Wash, peel and grate the raw mangoes. Mix the mangoes, sugar and water in a deep saucepan and boil till the mangoes are soft.
* Put this mixture into a food processor and blend till smooth.
* Put the blended mix back into the saucepan and on a medium flame.
* Add the remaining ingredients and cook for another 20 minutes.
* Take off from the fire and allow to cool completely.
* Pour into glasses, dilute with a little chilled water if needed, mix well and add crushed ice.

I got a couple of those at this site (which has a few more): http://www.btinternet.com/~bury_rd/rawindia.htm

Raw Indian food sounds yummy! Good luck :-)

I am going to start eating raw foods. Any advice, recipes, how to start?

October 5, 2009 - 3:35 pm 3 Comments

Hi everyone, within the last few weeks I have been researching natural cures, detoxing, and raw foods. From what I have seen it is an extremely healthy way to live. I am going to "ween" myself off cooked foods and am looking for a good way to start into raw foods. As well as recipes I could try. I am going to try to start off with some simple ones. :)
Thank you very much!

Veggie Spring Roll =)

This vegetarian Chinese-style spring roll recipe uses shiitake mushrooms and soy sauce for a very Asian flavor. You can also learn how to wrap spring rolls by following my illustrated step-by-step instructions here.
INGREDIENTS:
1/3 green cabbage, chopped into thin pieces
2/3 cup fresh bean sprouts
1/2 cup snow peas, sliced into thin strips
3/4 cup shiitake or portabello mushrooms, sliced thin
3 scallions, chopped
2 carrots, grated
2 tbsp soy sauce
1 tbsp sesame oil
one bunch fresh mint
spring roll wrappers
water
PREPARATION:
Combine all ingredients (except for wrappers and water) in a large mixing bowl, stirring well to coat the veggies with soy sauce and sesame oil.Submerge spring roll wrappers in water until pliable one at a time.Place 2 to 3 tablespoons in wrappers. Place two or three mint leaves on top and wrap your spring rolls. Serve with a dipping sauce.

Was Popeye Right?

August 7, 2009 - 8:12 pm 6 Comments

The other day I was doing some research on discovering which raw foods have the highest alkaline mineral content. The major alkaline minerals are calcium, magnesium, sodium and potassium. Any raw foods that are high in those minerals will be alkaline forming.

As you may or may not know, it’s very important to keep your body properly mineralized and at the same time functioning at the proper blood pH level of about 7.4.

Eating a cooked food diet will make you more acidic. Also eating too much fat in the diet will make you more acidic, because fat interferes with the body’s ability to deliver oxygen to the cells. Also nuts and seeds tend to be higher in the acid forming minerals of chlorine, phosphorous and sulfur. A high protein diet will also make you more acidic.

Keep in mind that it’s also possible to be too alkaline. The key here is the proper balance.

A Common Dietary Mistake:

A mistake almost all people make is in not eating enough raw and mineral rich leafy green vegetables. This is vital to your health. When you consume a high quantity of mineral rich foods, you’ll notice that your cravings for junk foods will go down dramatically.

We must eat lots of fruit to fuel ourselves, but fruit alone is not enough for us to thrive in the long term. We also need a food that is like a supplement, it’s not high in calories but it is high in nutrients. Dark, leafy green vegetables are high in minerals, vitamins, fiber etc.

Finding a way to enjoy eating leafy greens and even more important, finding a way to properly absorb the nutrients from these foods is vitally important.

Victoria Boutenko and her “Raw Family” started seeing their health deteriorate after many years of being raw. It turns out they didn’t really like eating greens. After extensive research she eventually realized that the lacks of greens in their diet was why their health was less than optimal.

In her book, “Greens For Life,” Victoria talks about a way in which anyone on any diet can improve their health. By simply adding a quart of delicious green smoothies to their diets.

Learn All About Popeye’s Super Food:

The first food I analyzed for its alkaline mineral content was celery. Then I analyzed spinach and found it was much higher than celery in alkaline minerals.

In fact, spinach was high not just in minerals but in virtually every major beneficial nutrient as well. Maybe that is why Popeye was so strong when he ate his spinach.

Let me give you a quick rundown of the alkaline minerals in 25-calorie servings of celery, spinach, kale, romaine lettuce and banana.

Celery

Calcium: 62.0 mg
Magnesium 17.0 mg
Potassium 403 mg
Sodium 124.0 mg

Spinach

Calcium: 109 mg
Magnesium 87.0 mg
Potassium 614 mg
Sodium 87.0 mg

Kale

Calcium: 68.0 mg
Magnesium 17.0 mg
Potassium 224 mg
Sodium 22.0 mg

Romaine Lettuce

Calcium 48.0 mg
Magnesium 20.0 mg
Potassium 358.0 mg
Sodium 12.0 mg

Banana

Calcium: 1.0 mg
Magnesium 8.0 mg
Potassium 100 mg
Sodium 0.0 mg

As you can see, all of these green vegetables are alkaline forming foods, but spinach is the overall winner. Even celery is higher in alkaline minerals than kale is. That was a surprise to me.

Spinach also has a better than perfect amino acid score of 119. Thirty percent of the calories from spinach come from protein.

It’s high in dietary fiber and its sodium is of course in the organic form, which our bodies utilize naturally. It’s the inorganic form of sodium which is toxic to us and every cell in the body.

Sea Salt Is Not A Health Food, No Matter What You’ve Read About It:

Sea salt or rock salt is not a health food no matter how many unabsorbable trace minerals it has. If you drink a glass of seawater you are going to get severely dehydrated, drink enough of it and you’ll die.

Why would consuming the salt, minus the water make it any healthier for you? This is just another marketing gimmick to get you to buy something which actually damages your health.

Spinach is also very high in these vitamins: A, C, E, K, B6, thiamin, riboflavin, niacin and folate. Spinach is quite high in these other minerals as well: iron, zinc, copper and manganese.

What many people don’t realize is that per calorie, spinach has over six times more potassium than bananas do. In fact, most of the green vegetables I tested had a higher potassium level per calories than bananas.

This is not to say you shouldn’t eat bananas, it’s just to point out that we’ve been taught to think of bananas as the highest source of potassium when they really aren’t. In fact, there are a number of other fruits that are much higher in potassium than bananas.

** No Need To Worry About The Oxalic Acid In Raw Spinach **

Some people are concerned that they’ll leach calcium by eating spinach. It turns out this is quite unlikely to be a problem for most people.

Here’s a quote from Dr. Gabriel Cousens book “Conscious Eating,” on this very point.

“In one extensive study on children put on a high-spinach diet and other high-oxalate foods, no evidence of any alteration of calcium, vitamin D, or phosphorous metabolism was found. It is possible, however, if a person has a low calcium intake or poor calcium metabolism, that a high-oxalate diet could cause a calcium deficiency.”

Another factor is whether the spinach is cooked or raw. In the raw form it’s believed the oxalic acid will not bind with the calcium. In other words, eat as much spinach as you want as long as it’s raw.

Did you know that many other raw foods naturally contain oxalic acid? Foods like sesame seeds, nuts, citrus fruit, tomatoes, asparagus, beets, Swiss chard, dandelion greens and cranberries. So if you haven’t been worrying about the oxalic acid content in these foods, I don’t think you need to worry about it by increasing your consumption of spinach.

** How To Add More Spinach To Your Diet And Enjoy It **

I’ve been adding more spinach to my diet by putting it in my smoothies. I’ve found that it doesn’t change the taste very much at all. And by blending the spinach in my Vitamix, I make the nutrients from the spinach more absorbable.

Most people don’t take the time they need to chew properly. Even if you are eating big salads, you are likely not absorbing the nutrients from the vegetables well enough, unless you’ve chewed every mouthful down to its liquid form.

Banana, Blueberry and Spinach Smoothie:

3 ounces water. Add more or less depending on how thick or thin you want your smoothie to be.

3 or more bananas

4 ounces of fresh or frozen blueberries

3 or more ounces of raw spinach

This makes for a delicious smoothie and at the same time you are making sure to get extra mineral and nutrient rich food into your body.

It doesn’t matter what diet you are on, adding green smoothies to your diet will improve your health and happiness.

Helping Your Body Live Forever!

August 7, 2009 - 8:12 pm 7 Comments

Toxic Environment
Toxins contaminate our systems on a daily basis. They are unavoidable… we find them in our water, our air, our food, and our surroundings. Where can we go? Nowhere, but what can we do? Lots!

We All Want To Live Forever
So does your body. Your body wants to live forever; it wants to be free from all pain and illness; it actively desires complete healing to take place within it at all times. Your body is your friend and partner in your effort to regain health. The body has the innate capacity, knowledge, and wisdom to heal itself at any time–if it is allowed to do so. The body possesses its own healing ability and the wisdom to direct this ability. The only thing we must do is let the body conduct its work with as little interference as possible. We can furnish it with the highest-quality raw foods when it needs it or abstain from food when it doesn’t desire it. We can exercise and rest the body, and give it fresh air and sunshine. Other than that, all we can really do is wait patiently and intelligently and not become alarmed by the symptoms of its healing or try to suppress those symptoms–even if we are healing heart disease, cancer, AIDS, or any other degenerative condition. You must trust your bodies ability in healing itself. After all, which man made machine is every as effective? Nothing comes close to the complexity of the human body.

Consult the Real Doctor Within You
If you have faith and trust in your body’s ability to heal itself, the unpleasant symptoms, which may accompany this healing, become more bearable and are not a source of fear or misgiving. Ultimately, we must let our body perform its health-restoring work at its own pace. The real doctor is within–the body alone is capable of performing all the needed healing functions. The cellular intelligence driving the body is infinite in its capacity. We need not have any fears about its wisdom or ability to restore itself to the highest-possible level of health and well-being.

Coffee, Are They Contamination As Well?
The stimulating effect of caffeine in cola, coffee, tea, and chocolate are well known. Substitute for cola: for the caffeine green tea; for the sugar it contains (one 0.2 l. glass contains 3 spoons full of refined sugar) you can drink fruit juices instead as it contains no artificial stimulants and its healthy for you as well!

Substitute for coffee:
Japanese or Chinese green tea. Gives the same kick because it contains the caffeine but is less worse because it does not contain the stomach irritating substances.

Your Health!
Bowel movements are the basis of your health. If you don’t have at least 1 bowel movement per day, you are already walking your way toward disease. Man’s body has not changed very much in the past several thousand years… however man’s diet has certainly changed a lot. All the refined sugar, white flour, hormone/antibiotics-filled meats we constantly ingest constitute an assault on our bodies. We are continuously violating our bodies by eating terrible foods. Colon cancer is the 2nd leading cause of cancer deaths in the U.S.

Effects of Toxins
1. Purify the blood and eliminate toxins
2. Prevent bloating
3. Improve liver performance and bile flow
4. Reduce the harmful effects of toxin build-up on skin, coat, joints and digestive system
5. Assist with systemic recovery after illness, medication side effects or vaccination
6. Maintain healthy thyroid functioning

Most Effective Detox Method
Both sauna baths and steam baths stimulate circulation and respiration, reduce muscular tension and cleanse and rejuvenate the skin and body through perspiration.

Some researchers also believe that sauna use may help melt and sweat out cellulite. We reserve judgment on this until we see further evidence, but it is certainly plausible - do your own research if this potential benefit is important to you. However, most important of all, sweating flushes out toxins which are embedded in your body which otherwise has no other way of coming out!

We urge you to find out more about why Sauna is the best method for detoxification.

The Benefits of Switching to Raw Food Recipes

June 22, 2009 - 2:29 pm No Comments

Consuming raw foods is natural. Our bodies respond very well to all that is fresh and vital and thrive when consuming these types of food. By increasing the amount of raw food that you eat you are actually opting for a feeling of increased well being. When you switch to a raw food diet, the raw food recipes are based on uncooked or unprocessed plant foods, preferably organic. These plant foods include a variety of fresh fruits and vegetables, nuts, seeds, grains, dried fruit, fresh juices and purified water.

The reason why you should switch to raw food recipes is because it is basically a vegetarian diet that promotes eating and drinking living foods. By consuming living foods and juices, you benefit from the maximum amount of fiber that can be found in a raw product. This fiber can be lost when the food is either processed or cooked. Raw foods are metabolized easier and are not as high in calories as the products consumed when following an average diet. The basic principle of a raw food diet is heating the foods up to 1160 F or about 460 C. The reason why you should not heat them at higher temperatures is found in the enzymes that are destroyed when subjected to such temperatures. The enzymes help food digestion and food absorption and they also give the nutritional value of foods. Therefore it is in our best interests to keep them intact. In the opposite situation, we actually force our bodies to an increased amount of work and we also contribute to the diminishing of the nutritional value of our food.

Subsequently, the benefits of raw food recipes are numerous. If you have a diet consistent of at least 75% raw foods you will receive health benefits such as increased energy, improved skin appearance, better digestion, weight loss or weight gain (depending on what your body needs). Other benefits include reducing the risks of serious illnesses like heart diseases, cancer, diabetes and more.

Raw food recipes are based on components that contain little or no saturated fats. Also, they are low in sodium, but high on magnesium, potassium and fiber. You can also use raw food recipes as detoxification solutions. If you appeal to different combinations of raw, living foods and juices you may find that they are useful for colon cleansing, liver cleansing, kidney cleansing and skin cleansing.

The reasons why you should appeal to a raw food diet may vary. Depending on these reasons, you can choose what to consume in order to improve that aspect of your health you are particularly interested in. For instance, sprouted brown rice helps slow glucose absorption and improve the metabolism; cabbage supports cellular function while radish leaves act as an anti-oxidant; carrots, a great source of vitamin A, are well-known to encourage healthy eyesight, but they also support a reliable cardio-vascular system.

Some people enjoy eating cakes and sweets. If you switch to a raw food diet, you shouldn’t think that you have to stop eating desserts. In a raw food diet you can use raw honey as a sweetener. Raw honey contains traces of propolis, a substance used by bees to seal the hive and protect it from harmful microorganisms. Other substances found in raw honey, called phytonutrients, help prevent colon cancer and can also help heal internal ulcers.

If you consume honey regularly, it is known to be beneficial for the general well-being and it also helps digestion. Amazing as it sounds, raw honey has been shown to improve athletic performance, a secret that was discovered by ancient Olympians. This happens because it helps maintain balanced levels of blood sugar, which in turn helps at keeping energy levels consistent. In addition, it helps muscle recovery. Other amazing properties of raw honey include the support it gives to the immune system in warding off colds and flu. It is a healthy substitute for sugar that can even help reduce the cholesterol levels. Include it in your raw food recipes and you will get the best for your body and mind.

The Basics for Raw Food Recipes

June 22, 2009 - 12:33 pm 3 Comments

In this day and age, everybody wants to improve their looks with a thinner waist line. For that, people may need some directions for finding healthy solutions to lose weight. The best choice someone can make in order to lose weight and gain health, energy and vitality is switching to a raw food diet.

People discover each day the benefits of raw food recipes. When switching to a raw food diet you will see improvements to your daily behavior like improved sleep, some anti-aging benefits, increased vitality and health. Owing to such advantages, the popularity of raw food diets is bound to increase, because we all want to improve the way we look and the way we feel about ourselves, don’t we?

In the beginning people didn’t cook their food and they consumed it raw. Eating like this helped them keep very healthy. Our bodies are built so that we can consume raw foods. The only thing we need to do is to rediscover the way we were in the beginning and enjoy all that nature has to give us. Consuming raw foods helps our bodies because they contain enzymes that help digestion. These enzymes are destroyed if the fruits and vegetables are cooked. Our body digests the foods through its own enzymes, but the enzymes in our body also give us energy. Therefore, when we use the enzymes in our bodies for digestion and not the ones in fruits and vegetables, it means that our energy levels and vitality are decreased.

Basic guidelines for planning your healthy raw food recipes recommend that you should include in your diet mostly fruit and vegetables, which are our most biologically conducive meals. Something that can help you in planning your raw food recipes is the categories in which fruits and vegetables are divided.

Fruits can be divided in sweet fruits (tropical fruits, persimmons, sweet grapes), acid fruits (lemons, citrus), sub-acid fruits (apples, pears, tart grapes) and fatty fruits (avocadoes, durian). Melons constitute a separate category of fruits. Some of the vegetable categories are non-starchy greens (spinach, cabbage), fruit vegetables (cucumbers, tomatoes) and root vegetables (carrots, celeriac). Another category of vegetables includes lettuce and celery. The vegetables named here can be found as items on a list of raw low carbohydrate foods. All these fruits and vegetables are the common components of raw food recipes.

Now that the categories have been established, here are some rules of combining them in order for you to avoid fermentation in the intestines, indigestion, water retention and toxicity. Sweet fruits are to be eaten with other varieties of sweet fruits only or with sub-acid fruits. Don’t eat acid fruit with anything other than celery and lettuce. Avocadoes and olives should be eaten with non-starchy vegetables. Melons should be eaten alone or not eaten at all. These are combinations that you should try. But there are a few combinations that you should try to avoid like starch and acid (tomato and potato), protein and protein (avocadoes and nuts), sweets and starch (maple syrup and rice). Think about these combinations when you are developing your own raw food recipes.

Raw food diets are not all about fruits and vegetables. Organic foods can also be included in the diet. Organic cheese is very nutritious and can be included in raw food diets because it does not involve a cooking process that destroys enzymes. You should make sure that the organic cheese you buy is organic, and not a scam. The process that is followed by farmers to obtain organic cheese consists of letting nature take its natural course, from harvesting the milk from the cows and letting it coagulate with no help from additional catalytic agents. Incredible products made from raw ingredients and that may include organic cheese can be found here, on rawbakery.com.
